Shahi Paneer Recipe

Ingredients:
Paneer – 200 Gms
Onions – 2 medium nos
Ginger – 1”
Garlic pieces – 3 – 4 nos
Green chilies – 2 nos
White pepper powder – ½ tsp
Red chili powder – 1 tsp
Turmeric powder – ¾ tsp
Cream – 3 – 4 tbsp
Dry fruits (Raisins, cashews, Makhane) – ¼ cup
Garam Masala powder – 1 tsp
Milk – ½ cup
Vegetable oil – 8 – 10 tbsp
Salt –  as per required

Method Of Preparation –
1)Take oil in a pan.
2)The paneer needs to be cut in small pieces. This needs to be fried till it is brown in color.
3)Once done, keep it aside.
4)Take the dry fruits and sauté it in one tbsp of oil.
5)In a blender grind ginger, onion, green chili and garlic to paste.
6)Once done, fry this in the left over oil till the oil starts separating.
7)To this add garam masala, white pepper powder, red chili powder, turmeric powder and salt. Keep Sautéing it for couple of mns.
8)To this add milk; keep boiling it till the gravy starts getting thicker.
9)Take a small part of dry fruits put it while the milk is getting boiled, the rest you can use for garnishing.
10)To this gravy add the paneer and cream. Continue heating it.
11)Garnish it with coriander leaves, dry fruits and cream.

Shahi Mushroom Recipe

Ingredients

200 grams mushroom
1 piece ginger (adrak)
4 onion (pyaj)
7-8 tomato (tamatar)
1/2 teaspoon spice blend (garam masala)
2 green chilly (hari mirch)
3 tablespoon clarified butter (ghee)
1/2 teaspoon salt namak
1/2 cup cashew nut (kaju)
1/2 teaspoon red chilly powder (lal mirch)
1 teaspoon sugar
1 cup cream (malai)

How to make Shahi Mushroom

 

  • Cut mushrooms into 2 pieces.
  • Finely chop all the other vegetables.
  • Heat ghee in a pan and fry onions until it turns pink.
  • Then fry ginger, green chilies and tomato.
  • When tomato soften remove it from the flame.
  • Grind it in a mixer.
  • Then cook in the pan and also add salt, red chilly powder, spice blend, sugar, cream and cashew nuts powder.
  • Cook for 2-3 minutes and then add mushroom.
  • Cook at low flame until mushroom softens.
  • Then remove it from the flame and serve hot.

Shahi Tukra Recipe

Ingredients

6 slices Bread
2 tablespoon Ghee
1 cup Full Cream Milk
1/4 cup Sugar
2 tablespoon Pista, blanched and chopped
Few strands of saffron
1/4 cup Water
1 Cardamom, powdered
4-5 Almonds, toasted and sliced

How to make Seviya Kheer

  • First you need to cut the edges of the bread. Thereafter, cut it diagonally to form 2 triangles. Keep the bread aside for about 2 hours, so that it becomes hard.
  • To make the sugar syrup, mix sugar and water and set the mixture to boil. Now, simmer the solution for about 10 minutes and add powdered elachi into it.
  • Take a pan and set the milk to boil. Simmer it until it reduces to 1/4th quantity. Simultaneously, keep stirring occasionally so that it does not stick to the pan. Now, add pista and few strands of saffron to the thickened milk.
  • Apply ghee on the sides of the bread and lightly fry them until they turn golden brown on both sides.
  • Arrange the fried bread on a plate. Pour the sugar syrup onto the bread and wait until it seeps down.
  • Now, spread the milk mixture onto the bread and sprinkle some almonds, pista and saffron strands over it.
  • Freeze it and serve when it is chill!!

Shahi Paneer Korma Recipe

Ingredients:
200 gms paneer (grated)
8-10 makhana
35 gms khoya (grated)
2 tblsp cream
3-4 green cardamoms
4-5 drops of kewra essence
1/2 tsp red chilli powder
6-8 cashew nuts (cut into halves)
1 tblsp butter
2 big tomatoes (chopped)
3-4 green chillies (chopped)
salt to taste
For garnishing :
Some coriander leaves
How to make shahi paneer korma:
  • Heat butter, cook tomatoes, add khoya and sprinkle a little amount of water to make a smooth paste, fry for 2- 3
  • minutes.
  • Add all of the remaining ingredients, mix well and cook covered for 4-5 minutes.
  • Garnish with coriander leaves.

Shahi Tukde recipe

Ingredients:
1/4 cup fresh cream
4 tblsp sugar
1 tsp green cardamom (chhoti elaichi) powder
100 gms khoya
1 tblsp sunflower seeds (chironji)
2 cup milk
2 strands saffron
pure ghee for frying
few drops of kewra and rose (gulab) essence
1 handful cashewnut (kaju) chopped
6 slices bread
for garnish:
3 silver foil
few rose (gulab) petals
How to make shahi tukde:
  • Cut each bread slice into two.
  • Fry the bread pieces in ghee till golden brown.
  • Assemble the fried breads on a plate.
  • Heat up milk, add the sugar and saffron and a few drops of essence.
  • Pour over the bread slices.
  • Allow the bread to soak up the milk, then assemble the bread pieces on a decorative plate.
  • Heat up two teaspoon of ghee and lightly fry the crushed mawa, cardamom powder and two teaspoons of sugar.
  • Spread the mawa layer over the soaked bread pieces.
  • Mix in essence to the cream.
  • Cover the mawa with a cream layer and decorate with silver foil, cut cashewnut, chironji and rose petals.
  • Serve warm or cold as you like.

Shahi Pudding Recipe

Ingredients:
1 litre milk (doodh)
1 cup sugar
50 gm cottage cheese (paneer)
2 tbsp custard powder
1 cup fresh cream
1/2 cup cashew nut and almond (kaju badam)
1/2 cup cherry
1 tsp vanilla essence
How to make shahi pudding:
  • Grate cottage cheese.
  • Chop cashew nuts and almonds.
  • Mix custard in 1 cup milk.
  • Boil the remaining milk until it is reduced to half.
  • Then add sugar and custard in it.
  • Stir continuously so as to thicken. Remove it from the flame.
  • Pour it in a dish when it cools.
  • Add cottage cheese and vanilla essence and mix well.
  • Beat cream and spread it on the top.
  • Garnish with cashew nuts, almonds and cherry.
  • Serve chilled.
