Makai Na bharta Recipe

Ingredients:

Coriander powder :-  one tsp

Turmeric powder :- one tsp

Fresh corns  :-  1 kg

Red chili powder  :-1 tsp

Oil :-    2 tbsp

Tomatoes :-   3 nos, medium

Garam Masala powder  :-  ½ tsp

Onions  :-  3 nos, medium

Cumin seeds :-    ½ tsp

Green chilies:-  6 to 7 nos

Salt  :-  as required

Coriander leaves  :-   as required for garnish

Procedure:

1)    Take the corn, boil it and grind the corn well

2)    Remove it and cut the onions finely.

3)    Take the tomatoes, wash it and cut it.

4)    Take the green chilies, wash it and cut it.

5)    Take oil in Kadhai, heat it up. Add cumin seeds and keep stirring till it splutters.

6)    Take the onions, put it in and keep frying till light brown.

7)    Add the green chilies and keep staring for 30 secs.

8)    Add in coriander powder, chili powder, turmeric powder, salt and garam masala powder.

9)    Once the tomatoes appear cooked add in salt, corn and water.

10) Keep stirring for close to ten mns.

11) Garnish it with coriander.

Makai Na Bharta Recipe

Ingredients

1 teaspoon turmeric powder
3 medium tomatoes
Coriander leaves cut for garnish
1 kg fresh corns
1 teaspoon red chilli powder
2 tablespoon oil
3 medium onions
1/2 teaspoon cumin seeds
1/2 teaspoon garam masala powder
6 – 7 green chillies
Salt to taste

How to make Makai Na Bharta

  • Boil the whole corn, take off the niblets and grind it coarsely in a blender.
  • Take off and finely cut the onions.
  • Wash and cut the tomatoes.
  • Wash and cut the green chillies.
  • Heat up oil in a kadhai, mix in cumin seeds and stir fry till they crackle.
  • Mix in cut onions and stir fry till light brown.
  • Mix in cut green chillies and stir fry for 1/2 minute.
  • Mix in red chilli powder, turmeric powder, coriander powder, garam masala powder and salt.
  • Stir fry for few seconds and mix in cut tomatoes.
  • When tomatoes are cooked mix in corn, salt and little water.
  • Stir fry for another 5-10 minutes.
  • Serve hot decorated with cut coriander.

Makai Ki Roti Recipe

Ingredients

3 bunches sarson, chopped
1 bunch spinach, chopped
2 tomatoes, chopped
1 bunch bathua (Amaranthus leaves)
4 onions, chopped
2 teaspoon makai flour
3 green chillies, chopped
1 teaspoon garlic, minced
2 tablespoon curd
1 inch piece Ginger
Salt to taste
2 tablespoon pure ghee
½ teaspoon Hing powder

How to make Makai Ki Roti

  • Remove stems of greens and wash them thoroughly.
  • Chop sarson, spinach and bathua finely and pressure-cook them for about half-an-hour. When cool, grind coarsely alongwith green chillies.
  • Heat oil in a pan. Add onion and sauté till golden brown.
  • Add garlic, ginger and stir-fry for two minutes.
  • Add chopped tomatoes and cook till tender.
  • Add coarsely ground sarson paste, salt and cook for 15-20 minutes.
  • Add makai flour diluted in two tbsp curd. Cook for another 5-10 minutes.
  • Serve with tempering of ghee and hing powder.

Makai Ki Roti recipe



Ingredients:
6 tblsp butter
1 1/2 cup corn meal (makai ka atta)
salt to taste
1/4 cup whole wheat up flour
How to make makai ki roti :
  • Mix cornmeal, whole-wheat up flour and salt.
  • Mix in sufficient lukewarm water, a little at a time, to make medium soft dough.
  • Divide the prepared dough into eight to ten equal portions.
  • Wet your hand with a little water and flatten each portion on a wet polythene sheet, into a disk of four to five inches diameter.
  • Heat up a tawa, apply a little oil and transfer makai roti carefully on to the tawa.
  • Spoon a little oil on the sides of makai roti and stir fry on low heat up for one minute.
  • Turn the makai roti and stir fry the other side for one minute or till crunchy and light golden brown.
  • Spray the cooked rotis with grease and serve hot with sarson ka saag.
