Kesar Burfi Recipe

Ingredients

500 grams Kaju(cashewnuts)
300 grams sugar
2 chandi (silver)warak
1/2 teaspoon kesar(saffron)
1/4 teaspoon orange color

How to make Kesar Burfi

  • Soak the cashewnuts in water for 3 hours.Drain the water and ground the cashewnuts,finely.
  • In a pan mix sugar and cashewnuts,and roast on low heat,stiring constantly.
  • Mix saffron and orange color in it.roast till done.
  • on the rolling board place a butter paper and pour the mixture on it.
  • Now place another butter paper ,sandwhiching the mixture between the two paper.
  • Roll it with rolling pin.
  • Remove the butter paper from top and place silver warak,and cut the kesar burfi pieces.

Petha Burfi Recipe

Ingredients

1/2 kg Soft white khoya
2-1/2 cups (approx.300grams) sugar powdered
1 tablespoon slivered or crushed pistachios
1/2 teaspoon cardamom powder
1 teaspoon cardamom seeds semi crushed

How to make Petha Burfi

  • Grate khoya with a steel (not iron) grater.Add powdered sugar and mix well.
  • Put mixture in a large heavy or nonstick pan.
  • Heat first on high for few minutes.
  • The on slow till done.
  • Make sure to stir continuously, while on heat.
  • When mixture thick and gooey, add cardamom.
  • Mix well, and take off fire.
  • Allow to cool, gently turning occasionally.
  • Use cookie moulds, or shape pedas with palms into patty rounds.
  • Mix pistachios and cardamom seeds and press a bit on top of each.
  • If using moulds, first sprinkle some at bottom.
  • Take some mixture and press into mould.
  • When set well, invert and carefully, unmould. The pedas are ready to be served.

1 Cup ghee
1 teaspoon Pista
2 Cup Water
1 Cup milk powder
1-1/2 Cup sugar

How to make Besan Burfi

  • Melt ghee and fry besan in it till a nice smell comes out.
  • Transfer the mixture in another vessel and mix with milk powder.
  • Make thick sugar syrup by combining water and sugar in a pot and heating them over low flame.
  • Drop the fried besan mixture in the prepared sugar syrup and stir it.
  • Add chopped pista or nuts and stir properly.
  • Transfer to a greased plate.
  • When firm cut into diamond shaped pieces and serve.

Coconut Burfi Recipe

Ingredients

2 cups Scraped Coconut Shreds
1 cup Sugar
2 tablespoon Milk
1/2 teaspoon Cardamom Powder
1-1/2 cup Water
1 tablespoon Ghee

How to make Coconut Burfi

  • Heat a pan, add the coconut shreds and fry gently over moderate heat.
  • When the coconut milk moisture is somewhat lessened, remove it from heat.
  • Now in a seperate vessel, boil water over moderate heat.
  • When the water boils, add the sugar and keep on stirring till the sugar water boils.
  • Add the milk to the boiling sugar syrup.
  • When the sugar syrup reaches a thick syrupy stage, add the fried coconut shreds to it.
  • Stir constantly till the coconut and sugar syrup are blended thickly and stickily together.
  • Now add the ghee and cardamom seeds powder.
  • Stir till the mixture looks thick, remove from the heat and pour into a ghee-smeared table or plate.
  • Flatten the surface evenly with the help of an oiled flat slice.
  • When cold, cut into squares or diamond shapes and serve.
